Sugar Cookies Recipes (for Hanukkah)
What you need for making Sugar Cookies?
2 ½ cups flour
1 ½ stick softened unsalted butter
3/4 cups sugar
1 beaten egg
½ tsp baking powder
1 tbsp fresh lemon juice
Grated rind of one lemon
½ tsp lemon extract
For the frosted decoration:
4 ½ cup confectioners sugar
3 tbsp milk
1 tbsp lemon juice
Sift together the four, baking powder and the salt.
In another bowl beat the butter till it gets creamy, and then add sugar. Continue till light and fluffy. Slowly add the beaten egg, lemon juice, extract, and rind. Blend it well.
Into this pan, add the four and baking powder mixture by spoonfuls, folding in till it forms a soft dough. This dough should be refrigerated for about three hours or better still, overnight.
Preheat the oven to 180 degrees centigrade.
Roll out the dough to a cm thickness. Cut out star shapes with a cookie cutter. In fact, try cutting out as many shapes as possible. Place at least 1 inch apart on a baking dish and bake till golden.
Spread out on wire racks to cool.
These are sweet and slightly spicy cookies, used for festivals. A dusting of confectioners’ sugar completes the special look.

½ cup ground almonds
½ beaten egg
3 tbsp raspberry jam
Grated rid of ½ lemon
1 tsp mixed spice
Confectioners’ sugar for dusting
Beat together the butter, sugar and lemon rind, till light and fluffy. Drop the beaten egg by teaspoonfuls, beating well after each addition. Then stir in the ground almonds, sift in the flour and mix in the spice. Mix everything together well, forming a soft dough. Knead till it is smooth then chill for about 30 minutes.
Roll out the dough about ½ cm thick and cut out cookie shapes, preferably stars.
Bake in a preheated (at 180 degrees c) for about 10 minutes, or till golden. Let them cool slightly. Warm the raspberry jam slightly and use it to sandwich two cookies. Cool well on a wire rack.
Dust with confectioners’ sugar and a bit of powdered cinnamon for a festive flavor.
Sparkling Stars Sugar Cookie recipe
¼ cup colored sugar crystals
2 ¼ cups flour
1 stick butter
½ cup superfine sugar
1 egg, beaten
¼ cup corn starch
½ tsp vanilla extract
Preheat oven at 180 degrees C
Beat together the sugar and butter till fluffy. Gradually add the egg, beating well each time.
Sift together the flour and corn starch and blend with vanilla and the butter mixture. Knead softly till it forms a smooth dough. Roll out on a floured surface about ¼ inch thick. Cut out star shapes. Sprinkle the colored sugar crystals on top and press them down gently, so they are just embedded in the dough.
Arrange the stars on a greased baking dish, and bake for about 10 minutes. Cool on the dish then move to wire rack to cool.
